Peach Jalapeno Margaritas

Ingredients Serves 4
For the margaritas:
3 large ripe peaches, peeled, pitted and roughly chopped
1 cup silver tequila
2 Tablespoons triple sec
1/4 cup fresh lime juice + more to taste
2-3 ice cubes

For the honey simple syrup:
1/2 cup honey
1 cup water
2 jalapeño peppers, seeded and cut into thin rounds

Garnishes:
sliced jalapeños
sliced peaches
lime wedges
salted rim

Directions
Prepare the simple syrup by combining the honey, water and peppers in a medium-sized saucepan. Bring to a simmer (don’t boil) and simmer for about 3 minutes stirring often until honey and water are well combined. Remove from heat and cool.

Strain the peppers and set aside.
Combine 1/2 of the simple syrup with the margarita ingredients in a blender. Whirl away until smooth.

Taste test and if it needs a little more “sweet-heat” add the remainder of the syrup. Blend again until smooth. Pour over ice and enjoy with an extra squeeze of lime juice, fresh peach slices and jalapeño slices. Cheers!
